Notes

  • Shortening can be replaced with margarine.

  • Baking powder (more gentle, doesn't have a bitter taste) contains baking soda<em>. If a recipe calls for soda, use powder instead, just add a little more. Soda leaves bitter bits unless it's mixed in /very well.

  • Cream —(whip)—> Whipped Cream —(whip)—> Butter

  • Butter or Margarine: 1 (American) stick = 113 grams = 8 ounces = 1/2 cup

  • If the oil is not hot enough, the french fries will be soggy.

  • Yeast: 1 package = 1/2 oz = 1 Tbsp

  • Heavy cream: 1:3 butter to milk.

Substitutes

  • 1 cup of sour cream

    7/8 c thick sour milk + 3 T margarine
