Rhonda's Cheesecake

Crust

  • 1/3 cup melted butter

  • 1 tablespoon suger

  • 1 1/2 cups graham crackers

Crush graham crackers to a semi-fine powder, mix with butter and sugar. Press into the bottom of a cheesecake spring-form pan and put in the refrigerator. Pre-heat oven to 375 F.

Filling

  • 2 packs 8oz cream cheese

  • 1 1/4 cup sugar

  • 1 teaspoon vanilla

  • 3 eggs

Mix all ingredients in a bowl, pour over the crust and put it into the oven at 375 F for 40-50 minutes until golden brown and firm.

Topping

  • 1 cup sour cream

  • 1/2 teaspoon vanilla

  • 2 tablespoons sugar

Mix ingredients and stick in the fridge until previous stage is done. Spread evenly over the cooked filling, and stick back into the oven for 10-15 minutes. When it is done, take a knife and separate the edge from the pan to avoid cracking. Store in the fridge until ready to eaten.
